The dirt block is a classic Minecraft icon so what would a Minecraft party be without some dirt blocks around the place? These dirt block brownies are a healthier alternative to normal sugar filled brownies and taste delicious. The spinach makes them moist and the honey keeps them sweet so nothing is missing. We make these on a regular basis at home and many of my kids friends are surprised when they learn that there is spinach and carrot in them.
½ C spinach purée (approx 50g spinach leaves)
¾ C carrot purée (1 large or 2 medium carrots)
80g melted chocolate
½ C honey
1tsp vanilla essence
¼ C cocoa
¾ C SR flour
150g butter (not margarine)
150g pure icing sugar
½ tsp vanilla essence
Preheat the oven to 180°C
Grease and line a 30cm x 20cm slice tray
Make the carrot puree by dicing the carrots and placing in a bowl full of water. Microwave them for 5minutes on high. Once finished blend until smooth.
Make the spinach puree by wilting the spinach leaves in a pot on the stove with a little bit of water. Once wilted blend until smooth.
Melt the chocolate in the microwave using a glass or ceramic bowl for best results. Use 30second bursts and once the chocolate starts to lose shape stir until all the chocolate is melted.
Combine the purees and chocolate and mix well. It will start looking a little less than desirable but once all ingredients are added it should look like this.
Add the honey, vanilla essence and eggs. Make sure the mixture isn’t too hot when you add the eggs or the egg white may cook a little. Mix until well combined.
Sift the cocoa and the flour into the mixture and beat for 3-5 minutes until well combines and smooth.
Pour into the slice tray and bake for 30-40 minutes depending on your oven. A skewer will come out clean once they are done.
Allow to cool completely before icing.
To make the icing combine all icing ingredients except the food colouring and mix until smooth and silky.
Separate the icing into 3 bowls and colour to make 3 different greens.
Place dollops of icing over the brownie and smooth out so that all 3 greens can be seen.
This helps to give it a more Minecraft ‘pixel’ look.
Cut and serve!
Things to note:
Allow the brownie to cool completely before eating or you will taste the spinach. Once its cooled you cant tell its in there!
You can make this a few days in advance if you need to.
Another way to ice it is with one layer of green icing and cover that with different green sprinkles. Or add sprinkles to the top of the multi green icing.
If you are really good you could use a grass tip and pipe green icing all over the brownie for a really authentic feel.
To make this without eggs you could use 2 tablespoons of vinegar or one mashed banana. The banana does chance the flavour slightly but its still good.
